Stephan Pyles

Stephan Pyles is recognized as the founding father of Southwestern cuisine, a culinary movement that reshaped American dining. Pyles was introduced to the restaurant industry at an early age, working at his family's Truck Stop Café in Big Spring, Texas. After studying music at Texas A&M University, his career path shifted following a formative trip to France, where he experienced haute cuisine.

Pyles gained significant experience at The Great Chefs of France Cooking School at the Mondavi Winery, serving as Chef's Assistant and working alongside Michelin three-star chefs such as Michel Guerard, Jean and Pierre Troigros, Alain Chapel, Paul Bocuse, and Gaston LeNotre. He refined his technique under Julia Child and learned about ingredients, flavors, and business from mentors Alice Waters, Jeremiah Tower, and Wolfgang Puck.

Pyles introduced his signature dishes at Routh Street Café in Dallas, contributing to the elevation of traditional Southwestern ingredients to haute cuisine. As a member of the Gang of Five, which included Dean Fearing, Avner Samuel, and Robert Del Grande, Pyles remained closely connected to the roots of Southwestern cooking traditions, continually evolving his approach.

Over more than 30 years, Pyles created 26 restaurants in seven cities, including Routh Street Café, Baby Routh, Star Canyon, Stephan Pyles, Samar, Stampede 66, and Flora Street Café. The James Beard Foundation named Star Canyon one of the top five best new restaurants in America. Pyles also hosted the Emmy Award-winning PBS series "New Tastes From Texas With Chef Stephan Pyles." His published works include "The New Texas Cuisine," "Tamales," "New Tastes from Texas," and "Southwestern Vegetarian."

Pyles was the 10th chef inducted into Nation's Restaurant News Menu Masters Hall of Fame, joining chefs such as Wolfgang Puck, Paul Prudhomme, Jeremiah Tower, Daniel Boulud, and José Andrés. He was the first person in the Southwest to win a James Beard Award for Best Chef and the first Texan inducted into The Beard Foundation's Who's Who of Food and Wine in America. Pyles has received 12 additional nominations from the Beard Foundation for Outstanding Chef in America, and six of his restaurants were finalists for Best New Restaurant in America. His accolades include the AAA Five Diamond Award, Restaurant and Institutions' Ivy Award, Nation's Restaurant News Fine Dining Hall of Fame Award, and the American Academy of Achievement Award. He has cooked for dignitaries and celebrities worldwide, including six American presidents, seven first ladies, Mikhail Gorbachev, and Queen Elizabeth II. Bon Appétit magazine credited Pyles with "almost single-handedly changing the cooking scene in Texas," and the New York Times described him as "an absolute genius in the kitchen."

Pyles is a founding board member of Share Our Strength, America's largest hunger relief organization, and received the organization's Humanitarian of the Year Award for his work with the No Kid Hungry Campaign. He co-founded The Hunger Link, Dallas' perishable food program, and established the Stephan Pyles Culinary Scholarship, awarding $250,000 to culinary students in Texas. Having transitioned from restaurant ownership and operations to consulting, license agreements, and organizing culinary tours, Pyles continues to influence the culinary landscape and regional American cuisine.
