Michel Nischan

Michel Nischan is a four-time James Beard Award winner, chef, and food equity advocate with more than three decades of leadership in building a healthier and more sustainable food system. The son of farmers, Nischan began his culinary career at age 19, cooking breakfast at a truck stop. There, he recognized the gap between the ingredients he used and the farm-fresh harvests from his upbringing, which inspired his lifelong commitment to the farm-to-table movement and sustainable agriculture.

At his Milwaukee restaurant Fleur de Lis, Nischan collaborated with local farmers to improve growing practices and protect heirloom varieties, advancing local food systems. A personal challenge—his son's diagnosis with juvenile diabetes—influenced Nischan to focus on healthful cooking and the development of what he calls "restaurants of well-being."

Nischan is the author of three cookbooks: "Sustainably Delicious: Making the World a Better Place, One Recipe at a Time," "Homegrown Pure and Simple: Great Healthy Food from Garden to Table," and "Taste Pure and Simple: Irresistible Recipes for Good Food and Good Health." "Taste Pure and Simple" appeared on bestseller lists in The New York Times and The Wall Street Journal and received a James Beard Foundation Cookbook Award. Nischan also earned a James Beard Award for his work on the PBS television series "Victory Garden." He has appeared on Oprah, the Rachael Ray Show, and other culinary television programs, establishing his expertise at the intersection of food, health, and sustainability.

Nischan co-founded Wholesome Wave, a national nonprofit focused on food access and nutrition equity, with former USDA Undersecretary of Agriculture Gus Schumacher. The organization played a key role in securing federal legislation supporting Food Insecurity Nutrition Incentive grants, which expanded affordable access to fruits and vegetables for low-income Americans. Nischan has presented and testified before Congress and participated in White House initiatives on hunger, health, and nutrition.

Nischan is founder and president of Wholesome Crave, a food company offering responsibly sourced, plant-forward soups to large-scale dining facilities and direct-to-consumer markets. A portion of Wholesome Crave sales supports Wholesome Wave. He is also co-founder of the James Beard Foundation's Chefs Boot Camps for Policy and Change. Nischan has received recognition including the James Beard Foundation Humanitarian of the Year Award and an honorary doctorate in humane letters from Post University. He is a lifetime Ashoka Fellow, serves on the board of the Jacques Pépin Foundation, and holds advisory roles with Chef's Collaborative, Modern Farmer, Good Food Media Network, and The Culinary Institute of America. Through his work in culinary innovation, food policy, and social entrepreneurship, Nischan continues to advance food equity and sustainable food systems in the United States.
