Michel Nischan

Michel Nischan is a four-time James Beard Award winner and chef known for his enduring commitment to building a healthier and more equitable food system. The son of farmers, Nischan began his culinary career at age 19, cooking breakfast at a truck stop. He quickly recognized the difference between the ingredients he used and the farm-fresh produce from his upbringing, which inspired his lifelong advocacy for the farm-to-table movement. At his Milwaukee restaurant Fleur de Lis, Nischan worked with local farmers to improve growing practices and protect heirloom varieties, furthering his dedication to sustainable agriculture and local food systems.

A personal challenge shaped Nischan's culinary philosophy when his son was diagnosed with Type-1 diabetes. This experience led him to focus on healthful cooking, resulting in the creation of "restaurants of well-being." He founded Heartbeat in New York City and Pure Restaurant in Mumbai, introducing a cuisine centered on organics, sustainability, and cultural food preservation. At Heartbeat in Midtown Manhattan's W Hotel, Nischan gained recognition for his approach to delicious, healthful cooking. He later co-founded Dressing Room Restaurant in Westport, Connecticut, in partnership with Nell Newman and Paul Newman, furthering his advocacy for organic and sustainable food.

Nischan is the author of three cookbooks: "Sustainably Delicious: Making the World a Better Place, One Recipe at a Time," "Homegrown Pure and Simple: Great Healthy Food from Garden to Table," and "Taste Pure and Simple: Irresistible Recipes for Good Food and Good Health." "Taste Pure and Simple" appeared on bestseller lists in The New York Times and The Wall Street Journal and received a James Beard Foundation Cookbook Award. Nischan also earned a James Beard Award for his work on the PBS television series "Victory Garden." He has appeared on Oprah, the Rachael Ray Show, and other culinary television programs.

Nischan's influence extends into food policy and social justice. He founded the food equity nonprofit Wholesome Wave in partnership with the late Undersecretary of Agriculture Gus Schumacher and with support from Paul Newman. Nischan and Schumacher played a key role in securing legislation for Food Insecurity Nutrition Incentive (FINI) grants in the Federal Farm Bill, a program that became a permanent part of future farm bills. Inspired by Paul Newman's philanthropy, Nischan also created Wholesome Crave, a plant-based food business designed to support Wholesome Wave.

The James Beard Foundation recognized Nischan as Humanitarian of the Year, and he received an honorary doctorate in humane letters from Post University. An Ashoka Fellow, Nischan serves on the board of the Jacques Pépin Foundation and advisory boards of Chef's Collaborative, Modern Farmer, Good Food Media Network, and The Culinary Institute of America. Through his restaurants, nonprofit initiatives, policy work, and public speaking, Nischan is recognized as a leading voice in culinary innovation, sustainable food systems, and food equity in America.
