Masaharu Morimoto

Masaharu Morimoto is a Japanese chef recognized for his expertise in Japanese cuisine and his innovative approach to blending Eastern and Western culinary traditions. After a shoulder injury ended his early career as a baseball catcher in Hiroshima, Morimoto began studying sushi and opened his first restaurant at age 24. He later joined the original Nobu restaurant, where he was promoted to executive chef, further refining his ability to integrate diverse culinary influences.

Morimoto gained international attention as a competitor on the Japanese television show "Iron Chef" and later as a prominent figure on Food Network's "Iron Chef America." He also appeared in "The Next Iron Chef" and "Iron Chef Gauntlet." Morimoto served as executive producer and head judge for Roku's "Morimoto's Sushi Master," a competition series focused on sushi skills. His television work has contributed to the global popularity of Japanese cuisine.

Morimoto has played a significant role in introducing Japanese flavors and techniques to a broader audience, opening restaurants in Philadelphia, New York, Napa, Honolulu, Mumbai, Mexico City, Tokyo, Maui, Orlando, Las Vegas, Doha, and Wynwood. His establishments include Morimoto Asia Orlando at Disney Springs, Momosan Ramen and Sake NYC, Morimoto Las Vegas at MGM Grand, Morimoto Asia Waikiki, Momosan Waikiki, Morimoto Doha, and Momosan Wynwood.

Morimoto's work has been recognized with numerous awards, including appearances on San Pellegrino's "Top 100 Restaurants in the World" list and a James Beard Foundation Award for Outstanding Restaurant Design for Morimoto New York. Morimoto Napa was named one of Food & Wine magazine's Best U.S. Restaurant Openings, and Morimoto Asia at Disney Springs received the Design Built Award of Merit from the American Institute of Architects Orlando and the Silver Award from the New York Design Awards. His cookbook, "Morimoto: The New Art of Japanese Cooking," won two International Association of Culinary Professionals awards, including the Julia Child Award for Best First Book. His second cookbook is "Mastering The Art of Japanese Home Cooking."

Morimoto has expanded into related industries, launching the Morimoto Signature Series of beer in partnership with Rogue Ales, a line of premium sakes with Fukumitsuya Brewery, Morimoto grape-seed oil, and Morimoto wine in collaboration with Michael Mondavi. He also developed a series of knives with Zwilling J.A. Henckels, combining Japanese blade styles with Western ergonomics. Morimoto has served as Holland America Line's Fresh Fish Ambassador and as Grand Marshal of the Japan Parade along Central Park West, highlighting his ongoing role in promoting Japanese culinary arts and culture worldwide.
