Gastón Acurio

Gastón Acurio is recognized as a leading figure in modern Peruvian cuisine and a significant influence in the global culinary industry. Acurio is a chef, writer, entrepreneur, and advocate for Peruvian gastronomy, contributing to the international recognition of Peru's culinary traditions through his work as a chef, restaurateur, author, television host, and public speaker. He began his culinary journey after leaving law school to study at Le Cordon Bleu in Paris, where he met Astrid Gutsche, his future wife and business partner. The couple later opened their first restaurant, "Astrid y Gastón," in Lima, initially serving cuisine influenced by French techniques before incorporating Peruvian ingredients and methods, helping to define a modern Peruvian culinary identity.

Acurio's business expanded from a single restaurant to an international group with more than 45 restaurants in 12 countries. His brands include "La Mar," "Tanta," "Panchita," "Chicha," "Madam Tusan," "Bachiche," and "Papacho's." "Astrid y Gastón" has earned top rankings on Latin America's 50 Best Restaurants and The World's 50 Best Restaurants lists. Acurio has also expanded into the Spanish market with a "La Mar" location in Madrid, reflecting his ongoing international presence. As a chef, restaurateur, and educator, he combines French culinary techniques with Andean, Amazonian, and coastal traditions, continually advancing Peruvian cuisine on the global stage.

Beyond the kitchen, Acurio has published 20 books, including "500 Años de Fusión," which received the Best International Cookbook award at the Gourmand World Cookbook Awards. His other works include "Perú, Una Aventura Culinaria," "Larousse de la Gastronomía Peruana," and "Edén.pe: 21 Revelaciones Para el Mundo," co-authored with Ferran Adrià. He hosts the weekly cable TV show "Aventura Culinaria" and the reality show "Master Chef" Peru. Acurio has spoken at international forums such as the Inter-American Development Bank, where he taught the Enrique V. Iglesias Chair on Culture and Development, highlighting his role in promoting Latin American and Caribbean progress through gastronomy.

Acurio's commitment to social change is reflected in his educational initiatives, including the founding of a culinary school for low-income youth in Pachacútec, Callao, and the establishment of APEGA, the Peruvian Society of Gastronomy. He also created the International Gastronomic Fair of Lima, later known as Mistura, which became a major event in Latin American gastronomy. Acurio has stated, "Cooking is an agent of social change, a tool for wealth creation, peace and fraternity," a philosophy that guides his work. He has mentored prominent Peruvian chefs, including Virgilio Martínez, Pía Leon, and Mitsuharu Tsumura.

Acurio's achievements have been recognized with several honors, including the Diners Club Lifetime Achievement Award from The World's 50 Best Restaurants, the international Eckart Witzigmann Award for Innovation (shared with Astrid Gutsche), and the Prince Claus of Holland award in the category of Collective Memories and Journalism. He was also named Entrepreneur of the Year by América Economía magazine. Through his restaurants, publications, television programs, and advocacy, Acurio has played a central role in shaping the perception of Peruvian cuisine and its place in global gastronomy.
