Caroline Glover

Caroline Glover is an American chef and restaurateur known for her commitment to scratch-made cooking and her influence on the culinary landscape of the Rocky Mountain region. A graduate of the Culinary Institute of America in Hyde Park, New York, Glover developed her culinary skills at The Spotted Pig in New York City, working under chef April Bloomfield and executive chef Nate Smith, and rising to the role of sous chef. She later expanded her understanding of the food system by working on farms in Pennsylvania, Vermont, and Colorado, experiences that continue to inform her approach to seasonal and locally sourced cuisine.

Glover is the chef and co-owner of Annette, a restaurant located in Aurora’s Stanley Marketplace. She named the restaurant for her great-aunt Netsie, a novelist and short story writer from Texas. At Annette, the philosophy of “scratch to table” guides the menu, with dishes prepared by hand and cooked over live fire, emphasizing the importance of ingredients, seasonality, and the people behind the food. Annette has received national recognition, including being named one of the "50 Best New Restaurants" by Bon Appétit and "Restaurant of the Year" by Eater Denver. The restaurant has also been featured in 5280 Magazine’s list of Denver’s 25 Best Restaurants.

Glover’s work has been recognized by the James Beard Foundation, earning the Award for "Best Chef: Mountain" and multiple nominations in the same category. She has also been named one of Food & Wine’s Best New Chefs. In her James Beard acceptance speech, Glover advocated for the recognition of restaurants as essential parts of the community. She is known for fostering an inclusive kitchen environment, prioritizing opportunities for women chefs.

Glover later opened Traveling Mercies, an oyster and cocktail bar also located in Stanley Marketplace. Traveling Mercies has been recognized by Esquire as one of the Best Bars in America and was a James Beard semi-finalist in the Best New Bar category. Through Annette and Traveling Mercies, Glover continues to focus on honest, rustic food and a welcoming dining experience, contributing to the growth and innovation of the Denver and Rocky Mountain culinary scene.
