Al Rosas

Al Rosas, known by his trademarked title The Organic Chef, is a Certified Culinary Professional and a recognized leader in the American organic food movement. Rosas began his culinary career at 15 as a dishwasher and advanced through professional kitchens, later serving as a food and beverage director for major hospitality brands including Marriott, Hilton, and Ritz Carlton. After relocating to Florida, Rosas shifted his focus to organic and sustainably raised ingredients following his wife's health issues related to chemicals in processed foods, influencing his approach to organic cuisine and sustainable agriculture.

Rosas established Rosas Farms in Marion County, Florida, where he raises grass-fed cattle, bison, wild boar, and poultry using humane and environmentally responsible practices. The farm, based on what Rosas describes as Pragmatic Organics Living, has become a model for families nationwide. Rosas Farms products are distributed wholesale through SYSCO Foods of Florida and are available at the on-site farm market. The farm also features Chef Al's Eco-Retreat, an eco-culinary destination that attracts visitors from across the country.

Rosas has received several awards, including the Sustainable Florida Small Business Practices Award, the Culinary Entrepreneur of the Year honor, the Minority Business of the Year award, and the U.S. Chamber of Commerce Blue Ribbon Award for small business excellence. Le Cordon Bleu culinary school recognized him as a keynote speaker and honorary graduate, and he has been nominated for the Organic Trade Association Leadership Award. His work in product consulting and development has contributed to significant changes in the organic food industry.

Rosas is the author of the cookbook "The Organic Chef" and co-author of "Pragmatic Organics," and has served as editor of Organic Chef Monthly Magazine. As a television personality, radio talk show guest, and global eco-consultant on organic food trends and eco-branding, Rosas has shared his expertise with audiences beyond the farm. He volunteers with Chefs for Humanity and Farm Aid, demonstrating his commitment to food justice and community engagement. Rosas continues to travel the country as a speaker, advocating for sustainable agriculture and healthy eating practices.
