Since then, he has implemented a very unique and personal style of cuisine with a huge emphasis using seasonal, regional Pacific Northwestern ingredients to accent to the entire culinary program.
The food style and philosophy at The Rainier Club best represents the travels and experiences of Chef Morris with a particular emphasis on extreme quality, unique and fresh ingredients procured directly from the source and an imaginative and visionary approach to cuisine along with it's interplay of presentation and technique.
Bill has worked at many of Seattle's famous and highly acclaimed establishments such as Rover's Restaurant as Chef Thierry Rautureau's Chef de Cuisine, The Salish Lodge with Certified Master Chef David Kellaway as the Executive Sous Chef and the Sorrento Hotel with Chef Barbara Figueroa as Executive Sous Chef.
Bill is a member of the American Culinary Federation and is currently certified as a professional chef. Bill has held many positions within the local chapter of the A.C.F. such as Board of Directors, Junior Membership Chairman, and is the Assistant Chairman for Apprenticeship. Bill has won many awards for his culinary abilities in both hot and cold food and pastry, including gold, silver, and bronze medals, as well as “Best of Show” designations. He has also been awarded the coveted A.C.F. Chapter Chef of the Year awards in both 1994 and 2005 respectfully, the Team Manager for the victorious showing of the Western Regional Championship Hot Food Team Competition. Bill has subsequently been honored with being recognized as one of the top 40 under 40 business leaders in Seattle for 2004 by the Puget Sound Business Journal, along with many other local, national, and international recognition's. He has also cultivated many others who are in his employ to go on and garner their own culinary accolades all made possible by the environment developed at The Rainier Club.
He is a firm believer in education and continues to support upcoming culinarians in the community through apprenticeships, extern and internships, personal coaching and outside involvement with different organizations, such as participating in philanthropic events like The March of Dimes Star Chef's, Taste of Washington, Farestart's Night on the Town and Taste of the Nation fundraisers. He is a graduate of South Seattle Community College's two year culinary program, as well as the California Culinary Academy and the Culinary Institute of America in New York. Bill also serves on the culinary advisory boards for the Art Institute of Seattle and South Seattle Community College, and is quite involved in mentoring students and providing unique and educational opportunities for them.
Bill is a resident of Seattle and enjoys snow skiing and spending time in the mountains and outdoors as well as photography and music.
