Executive Chef Phil Evans’ specialty is a fusion of foods from local farms and areas around the world . His accomplishments and accolades in his dozen years in the culinary industry are numerous. Most recently, he was opening Executive Chef of The Umstead Hotel and Spa in North Carolina, where, in the first six months, he earned both Mobil 4-Star and AAA 5-Diamond ratings. Umstead was named to Condé Nast Traveler magazine’s hot restaurant list in its first four months. Phil was also Executive Chef at the St. Regis Resort in Aspen and played a key role during the resort’s grand re-opening. At The St. Regis Hotel in Houston as Chef de Cuisine, he also received top ratings from Mobil and AAA, and accolades from Esquire magazine. More than once he has been nominated to cook at the prestigious James Beard House and is featured in the “Great Chefs Cook Vegan” cookbook with Charlie Trotter, Thomas Keller, Daniel Boulud and Jean-Georges Vongerichten. In 2007, he cooked on the Food Network stage at the Toronto Food and Wine Expo.
